3 Spring recipes to create at your ABI

Now most of you are back at your ABI, it’s time to grab your apron and cook up a storm in the kitchen 🧑‍🍳 

Take some inspiration from our spring recipes below 👇 

Fish Pie 

Who doesn’t love a classic fish pie 😍 This is the perfect recipe to feed a family of 4-6 people. 

The ingredients you’ll need for this recipe are: 1kg Maris Piper potatoes, 400ml milk, 25g butter, 25g plain flour, 4 spring onions, 1 pack fish pie mix, 1 tsp English mustard, a small bunch of chives, a handful of frozen sweetcorn, a handful of frozen petits pois and a handful of grated cheddar.  

  • Start by preheating the oven to 180°C and then peel and halve the potatoes. Place into a saucepan with some water, making sure there is enough to cover the potatoes.  
  • Bring the potatoes to boil and simmer until they are tender. When they are ready, drain and mash them with a splash of milk and butter before seasoning with black pepper.  
  • Next, put the butter, plain flour and 4 finely sliced spring onions into another pan, heating until the butter has melted and everything is mixed.  
  • Whisk in the milk and bring to boil, ensuring there aren’t any lumps and that it isn’t sticking to the pan. Cook until thickened.  
  • Take the pan off the heat and add the mixed fish, English mustard, a bunch of snipped chives, sweetcorn and petits pois and then spoon into an ovenproof dish.  
  • Add the potato on top with some grated cheddar cheese and finally place into the oven for 20-25 minutes until golden. Then it will be ready to serve! 😋 

Tarragon Chicken with Asparagus, Lemon and Leeks 

This is a super delicious recipe and one not to miss! 🍴 

For this recipe, you’ll need: 2 lemons, 60g olive oil, 4 garlic cloves, 2 tsp salt, ½ tsp pepper, 28g tarragon leaves, 1 bunch asparagus, 1 leek and 400g chicken breast. 

  • First, preheat the oven to 180°C.  
  • Start creating the marinade by adding the zest of one lemon and its juices into a bowl with oil, garlic, salt and pepper and mix well.  
  • Trim the asparagus and place it into a bowl, spooning some of the marinade over the top, ensuring the asparagus is fully covered.  
  • Next, place it on a parchment-lined sheet pan, add the leeks to the same bowl, toss in the marinade, then spread onto the pan.  
  • Add the chicken breasts with the remaining marinade and place them with the asparagus.  
  • Zest the second lemon over the whole pan, adding slices of lemon over the asparagus, and then place into the oven to cook for 20 minutes until the chicken is fully cooked.  

Lemon Drizzle Flapjacks  

This is a great dessert recipe to feed your sweet tooth 🍋 

The ingredients include: 250g butter, 125g soft brown sugar, 175g golden syrup, 425g porridge oats, 1 lemon, 150g lemon curd and 50g icing sugar. 

  • Preheat the oven to 180°C and line a 20 x 20 tin with baking paper.  
  • Next, grab a pan and add the butter, sugar and golden syrup. Heat until all ingredients are melted.  
  • Add the oats and zest into the pan and stir everything together.  
  • Pour ¾ of the mixture into the tin and press firmly, creating an even layer.  
  • Afterwards, spread the lemon curd on top and finish with the remaining flapjack mix to create a sandwich effect. 
  • Place the tin into the oven and bake for 30-35 minutes until golden and then leave to cool.  
  • Lastly, mix the icing sugar and lemon juice into a bowl and lightly drizzle over the top of the flapjack 😍
